Fall has brought a record harvest of glossy new cookbooks. And judging by the heft, variety and sheer volume of what can only be termed a literary and culinary avalanche, any reports of the publishing industry’s imminent e-book-driven demise weren’t talking about the cookbook division.

The fall publishing crop includes every type of cuisine, from Peruvian to Portuguese. There are cookbooks by celebrity chefs, TV stars and singers. Book-inspired recipe volumes and movie-inspired cocktail tomes. And taco books galore.

So we sifted through the towering stacks and chose five favorite recipes from five favorite books. Turn the page and prepare to be smitten by the sugar-dusted pistachio cakes from Claire Ptak’s “Violet Bakery Cookbook,” a salmon-cucumber beauty from Joanne Weir’s “Kitchen Gypsy” and more.
